Born from an idea of the Marcolin family, BACCALÀ is a line of products for professionals, created with the aim of enhancing some of the specialities offered daily in the delicatessen of the same name inside the "Sotto Salone" in Padua. For over thirty years, Marcolin's delicatessen has been a reference point for traditional ready meals, cold meats and cheeses, but above all for lovers of cod in the Veneto region, as it specialises in preparing this fish in different varieties: whipped, seasoned and Vicenza-style, according to traditional Veneto recipes. This led to the idea of creating a line entirely dedicated to it.
The gastronomic preparations that have been successfully sold in the family shop for years have been developed by father Francesco, born in 1946, who started working at the age of 15 as a shop assistant until he took over the shop in 1985, thus giving vent to his passion for gastronomy. This passion was then passed down to his sons, who now proudly carry on the business and who over time have had the intuition to develop a line focused on their flagship product, cod, so as to find a wider market and make the taste of this traditional dish more widely known.
The passion for this delicious Norwegian fish and the constant research for new flavours to enrich the traditional gastronomy has pushed the Marcolin family to revisit the recipes of cod, expanding the tastes, while always maintaining the search for the highest quality products. This is why, every year, they travel in person to Norway, to the Røst islands on the south-western tip of the Lofoten archipelago, to select the best pieces.
The BACCALÀ brand offers, in addition to the classic line of whipped, Vicenza-style and seasoned cod, a gourmet line consisting of 90 gram glass jars of natural whipped cod flavoured with chilli, green olives and truffle.
